Let's say that there is a Countess of X and the heir to the earldom is unmarried. Does she immediately become the dowager countess when her husband dies, or only when the new Earl of X marries and there is a new Countess of X?

She doesn't become the Dowger Countess of X until there is a new Countess of X. _________________
